We're so excited for this special event! Join us for an evening of Chef Sophia's Filipino cuisine paired with wines handpicked by Dabble's Chef Jamie. For those new to Filipino food, you'll find an evening of familiar, yet unique, foods, as Sophia blends spices and flavors from her parents' homeland with locally sourced ingredients from local markets.
The four-course meal will take you on a culinary adventure through a country that may be unfamiliar to you, but whose cuisine you're sure to love.
Sophia is a self-taught chef and owner of Ate's (pronounced "Ah-teh's, meaning "older sister" in Filipino) Nashville food project and catering. She draws from the flavorful meals her family made growing up in the Philippines and throughout the United States. Though her food is distinctly Filipino, you'll find nods to Hawai'ian, Japanese, Korean and Mexican cuisines throughout her dishes. Chef Sophia has brought her Filipino specialties to events and markets around Nashville, including the Nashville Cherry Blossom Festival, the Celebrate Nashville Cultural Festival, and the Nolensville Farmers' Market.
Appetizers: Lumpia (fried spring rolls made with ground pork, ground beef, onions, carrots, water chestnut) served with a sweet chili dipping sauce &Adobo Fried Chicken Bites (bites of crispy fried chicken, marinated in adobo sauce -- soy sauce, vinegar) served with a sweet/spicy dip
Soup: Sinigang (slightly sour/tangy soup made from a tamarind base). Includes braised beef, eggplant, radish, Asian greens.
Entree: Kare Kare (beef oxtail slow cooked in a peanut sauce). Served with Asian greens, coconut rice.
Dessert: Ube Cheesecake. Complete your meal with a mini ube cheesecake, made from a purple yam native to the Philippines. Think sweet potato, only purple. Topped off with a chocolate and caramel drizzle.
